Tracklements Caramalised Red Onion Relish
Grill the steak for three minutes on each side for medium rare or longer if preferred. Slice the baguette and lightly toast the outsides. Add salad leaves, the steak and a good helping of caramalised red onion relish to create the perfect snack or light meal.
8 Dean Court Farm Sausages
4 tbsp Tracklements Onion Marmalade
Cook the sausages in the oven until almost done. Drain off the fat and put the onion marmalade on top.
Finish cooking in the oven for 5 minutes; place the sausages on a bed of mashed Dean Court Farm potato. Stir a little Dean Court red wine into the pan juices for a brilliant onion gravy and serve with a glass of red wine to compliment.
280ml milk, warmed
30g plain flour
3 egg yolks
5 tbsp Tracklements Beer Mustard
2 dsp Worchester Sauce
3 tbsp ale
4 slices of thick cut bread
120g Cheddar cheese, grated
Melt the butter in the pan, stir in the plain flour and cook for 2 mins. Add some warmed milk to the butter and flour mixture and whisk well, gradually adding the rest of the milk. Bring to the boil, whisking continuously. Whisk in the egg yolks and bring back to the boil before adding the beer mustard, Worchester sauce and ale. Then whisk in the cheddar cheese until smooth.
Toast the bread on both sides, spread the Rarebit evenly over the surface and place back under the grill until golden brown on top. Serve with a pit pf ale to compliment.
